how to fade volume in midi data in cubase program?

cc7 is volume in midi

If using a Scope synth right click on the main volume controller and assign it to cc7 - some already have midi controllers set up for various functions.

If using a VST, most synths respond to cc7

You can either use a hardware fader to control the fade whilst recording or draw it in after.
To draw it in afterwards, set your quantise and steps to, say 64 (smoother fade) , right click to select the "x" symbol from your toolkit and draw your fade - see below

Tip
Create a new part for the same instrument on the same midi channel.
Draw your volume curves/slopes in this second part, keeping it away from the note data. It's easier for editing.

That sounds like a posher version of Cubase than my 32/5.1 :)

btw cubase has a setting "no quantizaion": its the icon with the white vertical bar. If you diable it and then draw cc info in the roll-off you can get much smoother curves that go to the limit of the midi specs. works quite nice...
