Funny..., I don't use to listen to this kind of sound, I'm really very bad on keyboard and the single layer sampled piano is not good too.

So, the exercise was to get it better with vinco, psyQ, masterverb and optimaster.

long time no hear!
This reminds me of the Narada school of new age piano or Suzanne Ciani to some extent, crossed with a classical feel.
I liked it - perhaps a bit wooden at the start but there's some nice warmth there.
I've only listened to it through headphones yet and it sounded fine through them.
I'll leave the finer points of the mix quality to the experts.

This could do with some dynamics imho - also it sounded to me as if it had been rigidly quantised ? Or perhaps I'm too set in my ways to understand the feel ?

yes the problem with sequenced piano is the quantification. It has no feeling. Dequantize everything and replace notes/chords manually where they are expressive (no quantize grid or snapping, fully manual). use the silences.
I never tried to do this with a tempo curve, must be hell (or very fun). (it can also be played , out of any tempo

use iterative quantise, and correct the most extreme faults by hand

you keep the feeling, but correct for the (too) big mistakes

You've touched my lack point, when I forgot the missing part with sequencers and when I usually fall into the mistake of putting every notes in supposed (un)right place regarding the Tempo/Grid and in the end that "human factor" get absent so the feel...

Well, I'm learning a lot and I find that after listening like 50 times to the same song is no good way when comes a time where I even can not discern about some crucial mistaken points.
