I connect my Sony 57ES (SPIDIF) to the Pulsar II (AESBU) via Digital in/out with an adaptor cable, but I don't know what kind of setting should I do for recording from Dat (Digital).

The pulsar2 plus (which is what I have too) has 'professional' connectors, ie. balanced XLRs for analogue audio and also XLRs for the AES/EBU digital standard. SPDIF is considered a 'consumer' format, although lots of pro audio gear uses it; you'll probably only encounter lots of AES stuff in television companies I'm afraid. M-Audio (formerly Midiman) do a converter called the Co3, which converts Coax/Optical SPDIF to AES/EBU and vice versa. It's not cheap at an RRP of $250, so see if you can find one second hand or there may be cheaper converters available.

This should work. Used such a connection to/from my dap1 to the pulsar1+. You should use a coax cable 75Ohm, one end a cinch (for the sony), the other an xlr. In the xlr, connect the braid of the coax to pin1 and 2, and the center to pin 3. Put the pulsar in slave to spdif.

it's a bit techie but does explain potential pitfalls of going from S/PDIF to AES3 and has some wiring diagrams on how to convert cheaply. However it seems you'll encounter more problems if you try to convert AES3 to S/PDIF (dunno if you want to do it both ways).
