don't bother unless you are in mixdown and you want to mix in scope. for tracking, just use a stereo output so that you don't spend an extra half or hour setting up and labeling two programs....

as Gary says, just record track by track via the main mix outs.
Forget the busses of the mixer, you don't need them!

You can solo-ing each mixer channel, or you can solo the track you wanne record in Cubase.
Whatever you are soloing you can record separately from the main mix out to one track in Cubase (mute that recording track from monitoring to avoid feedback).

Once you have clear the principle of the connections and routings you can start thinking about other ways of working if you like.
