how do you guys handle the clicks (in uknow -007 for example) when you play short note and the attack and the release are on minimum ?

so far i just took the attack and release just abit beyond zero but sometimes it's just npot enough.

Yup, it's called FAST digital envelopes. Even "real" analog synths do this, as do virtual analog and wavetable synths. Because the envelope is going from 0 up to the attack time within such a short amount of time, you hear the quick change as a small click.

Solution: Raise the attack to above 3, and the click should vanish. If this changes the "punch" of the sound, then use a compressor or transient designer to get it back.
