So I've been down to my local computer store & they've offered me the following:

Intel i7 4790k
Gigabyte GA-H97-Gaming MB
Asus GeForce GT610 Silent 1 GB Graphics card
2 x 8GB Kingston DDR3 1600MHz RAM
SanDisk SDSSDHII-240G-Q25 Ultra II SSD
2 x WD Blue WD10EZEX 1 TB Hard drives
Windows 7 Home Premium

Haven't decided on the case & power supply yet. I'm running 2 Scope cards (4 dsp & 6 dsp) with v5.1

Any thoughts on this setup would be appreciated. Is the graphics card really necessary?

it will probably work.
the graphics card might not be required, but it's probably a good idea.
