my analog mixer specs (sooundcraft M8) say 75 ohm for all outputs, even balanced outs.
What cable impendance should I use for connecting with xlr i/os of my scope14dsp pci card?

With analog audio signals, you don't need impedance matching. Instead you go for impedance bridging. Therefor, you don't have to go for a specific cable impedance.

Audio cables all tend to be 75ohm anyway, while specific XLR AES/EBU cables are 110 (digital connections). That's about all the choice you have.
While physically they might look the same, when shopping you have to really look for the AES/EBU cables. They're more of a specialty item. The 110ohm cables will work fine for audio, but the 75ohm typically won't work very well for AES/EBU.
