I use an iPad, and working on Lemur templates for some devices. I can also use remotedesktop to control scope directly, but don't know of a client that does multitouch, yet. If you know of one, please share!

iPad is multitouch: yes.
With an iPad and Lemur (or any or control app), it can recognize 10 simultaneous touch events.
The remotedesktop (RDP) protocol, or that the clients I know of for iPad, do not support more than 1 touch event. (I assume SCOPE 5 doesn't support multitouch yet, but this is true for programs that do support multitouch).
