Is it possible to tell Luna to boot and start up with a specific programme so that I don't have to manually change it each time... the manual isn't the most obvious of things?

Yup, just click Settings and "Save Project as Background" and also "Save Project as Default"

Background project loads when you close Luna or boot into windows/mac.

Default project loads when you open Luna.
